Chock full of fruit, toasted nuts, and a homemade dressing that's both light and satisfying, Abingdon Manor's Apple & Orange Salad with Honey-Garlic Dressing can be served as a meal in itself (think lunch or a light dinner) or as a colorful accompaniment to grilled chicken, fish or pork.
Although it's hard to imagine how a recipe of so few ingredients could produce a salad so pleasing, rest assured the honey-garlic dressing sends this salad soaring to new heights. Delightful in its own right, this easy-to-prepare dressing allows the sweet and tangy flavors of citrus and apple to shine!
Apple & Orange Salad with Honey-Garlic Dressing

Yield: Serves 4
- 1/4 cup honey
- 1/4 cup oil (I suggest olive oil)
- 1 clove garlic, peeled and finely chopped
- bibb lettuce, chopped
- red and green lettuce, chopped
- 1 red apple, thinly sliced (unpeeled)
- 1 green apple, thinly sliced (unpeeled)
- 2 large oranges, peeled and sectioned
- optional - a sprinkling of chopped & toasted walnuts, pecans or almonds
Mix the oil, honey & garlic in a jar (with lid) and shake before serving. Tear or cut lettuce(s) into bite-size pieces and mix with apples and oranges, add toasted nuts if desired, and toss all with dressing. Serve immediately.
