Zesty Balsamic Strawberries

Yield: Serves 4
- 1/3 cup granulated sugar
- 1/4 cup water
- 3 strips orange peel, cut into 1/2" widths
- 3 strips lemon peel, cut into 1/2" widths
- 3 tablespoons balsamic vinegar
- 2 pints strawberries, hulled & halved
In a small saucepan, combine the sugar and water, stirring to blend. Add the orange peel & lemon peel and bring to a boil over medium heat. Boil for 2 minutes, remove from heat, cover and let cool to room temperature, about 20 minutes. Remove the orange peel and lemon peel and discard.
Transfer the cooled syrup to a medium bowl and stir in the vinegar. Add the strawberries, tossing to coat. Spoon the strawberries and syrup into four, individual bowls and serve. If desired, top with freshly whipped cream and garnish with a sprig of basil or mint.
